Deliciously Ella’s Smokey Black Bean Stew

Introduction

I made this for the first time this week as I am experimenting with vegetarian dishes. I loved the smokey taste and it felt healthy and was quick to put together. A brill dish

Ingredients

  • 2 x 400g black beans drained
  • 1 x 400g tin tomatoes
  • 1 red onion peeled and chopped
  • 2 Garlic cloves peeled and chopped
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tbsp almond butter
  • 1 tbsp tomato purée
  • Juice of one lime
  • Pinch of salt
  • Olive oil
  • Optional : chopped coriander, avocado

Method

Heat a drizzle of oil in a pan and when hot Add salt onion and garlic and cook for 5-10 mins, til soft. Add the paprika and cumin and cook for two minutes before adding the almond buttter, tomato purée, black beans and lime juice and tinned tomatoes. Bronn to the boil, reduce temperature and allow to simmer for 15 minutes. Add chopped coriander or even some avocado to finish. Enjoy
