Karmasutra Starter Spice Crumble Carpaccio

Introduction

This fingers only aphrodisiac loaded carpaccio is a lovers delight, rare beef fillet or ostrich fillet gently seared, juicy tender and caressed by ginger, lime and coriander.

Ingredients

Makes 2 generous portions

  • 200g beef fillet
  • 50g plain popcorn
  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 2 tsp garam masala
  • 150g dry white bread
  • 8 radishes, finely sliced
  • 1cm, peeled fresh ginger and sliced julienne
  • 1/2 red onion, sliced
  • 2 tbs coriander leaves finely chopped
  • 1 finger green chilli, finely chopped
  • Juice of 1 lime, and 1 tsp of lime zest.
  • 1 tbs pomegranate seeds
  • Generous glug of extra virgin olive oil
  • Dash of salt

Method

  1. For the spice crumble, pop the popcorn, coriander/cumin seeds and garam masala and bread seasoning in a blender. Pulse until everything is crumbly.
  2. Slide the contents into a plastic food bag and throw in the fillet. Jiggle everything about until the meat is thoroughly coated.
  3. Now heat a griddle pan or skillet over a high heat until it starts to smoke and brown the fillet on all sides until you see a crust forming, this will take around 5-8 minutes, try not to agitate it too much, just gently turn it. Remove from the pan and leave to rest for 10 minutes.
  4. Next, slice up the radish, red onion, julienne (slice into matchsticks) the ginger and finely chop the coriander and chillies, slide everything into a large bowl along with the lime zest.
  5. Pay the fillet a visit and using a very sharp knife, cut slices 2-3mm thick until there’s nothing left and use the back edge of the knife across each slice stretching each piece a little.
  6. Pop the fillet into the bowl with the fresh ingredients and squish lime juice, scatter the pomegranate seeds in and a glug of olive oil over the top, pitch in a dash of salt and mix well.
  7. Serve on a platter and layer the ingredients ready to eat with your fingers.

Any top-tips?

Everybody says the key to healthy relationships is to listen and talk…in part that’s true. In reality, forgiveness is the key to nurturing healthy relationships. Forgiveness for all the times we’ve spoken to hastily instead of being quick to listen, forgiveness for when we chose not to act and let pride get in the way. Forgiveness for when we’ve let our opinions supercede the value of our relationships.

One quick tip, is to ask your partner at the start of each day what you can do for them…it’s a magical way to kick of each day.

Oh and as a chef..try and cook together at least once a week, it’s a solid way of spending some time together in the midst of a busy day.
